Human Rights Watch is using Drupal for their main website http://hrw.org.
Human Rights Watch is a well-known international organization that advocates freedoms in connection with fundamental human rights, such as freedom of religion and freedom of press. Issues raised by Human Rights Watch include social and gender discrimination, military use of children, political corruption, torture, abuses in criminal justice systems, and more.
They built a stunning Drupal site available in multiple languages. The idealist in me is touched by the strong design and photography, as well as the fact that Drupal helps improve the world a bit. Awesome!
Symantec using Drupal
Symantec, a global leader in providing security, storage and systems management solutions, is using Drupal for Symantec Juice, a community website for customers and end-users. Check it out at http://www.symantec.com/community.
Interesting tidbit: by participating in site discussions, users earn points that can be redeemed for everything from gift certificates to an Hawaiian cruise.

Oxfam using Drupal
The flagship site of Oxfam International, http://oxfam.org, is using Drupal. Oxfam is also using Mollom to protect their blogs from comment spam. Oxfam International is a confederation of organizations actively working in more than 100 countries to find lasting solutions to poverty and injustice. I've always believed that Oxfam was big on Plone, so I wonder why they decided to go with Drupal instead? Regardless, it's great to see that Drupal adoption continues to grow in the non-profit sector.
French Ministry for Health, Youth and Sport using Drupal
The French Ministry for Health, Youth and Sport launched a Drupal-based information portal for French youth: http://www.jeunes.gouv.fr. Building on the rapid adoption of Drupal by non-profit and advocacy groups, Drupal's use by governments just keeps increasing!
ASI using Drupal
Drupal goes to space! ASI is in Italy what NASA is in the USA. In other words, ASI is the Italian national agency for space activities, and works primarily with ESA (European Space Agency) and NASA (National Aeronautics and Space Administration). Among their many projects include recent work on construction of the International Space Station. Turns out their site uses Drupal. Check it out at http://www.asi.it.
MIT using Drupal
It would be interesting to get a list of all the Drupal sites at MIT -- I know they have quite a few. Recently, MIT's well-known Computer Science and Artificial Intelligence Laboratory (CSAIL) launched its new and improved website using Drupal at http://www.csail.mit.edu. DIG, a group at CSAIL that includes father of the web Tim Berners-Lee, has been using Drupal for many years now. Great!
